Creamy Mashed Cauliflower Recipe

Mashed potatoes are no doubt an American tradition we all know and love. Rather than going carb crazy and feeling guilty about our indulgence, I have found that replacing potatoes with cauliflower is a lightened-up slam dunk! One serving of my Mashed Cauliflower will have you adding it to the side dish list for dinner all week!

Can This Creamed Cauliflower be Frozen for Later?

When you make this creamed cauliflower, it’s a great idea to make more than you need. You can take half of the batch and put it in the freezer to have for another night. I love a cook once eat twice recipe! If you are adding this to the freezer, make sure it’s in an airtight container or freezer bag. Be sure to label it so that you know what it is and when you made it. This creamy mashed cauliflower will last about 6 months in the freezer.

These cauliflower mashed potatoes are actually great for all eating plans. They’re packed with nutrients and also keto friendly. You don’t have to struggle to let go of potatoes anymore!

Ingredients for Mashed Cauliflower with Cream Cheese

  • cauliflower
  • fresh or jarred garlic cloves
  • fresh chives
  • chicken or vegetable broth (water also works in a pinch)
  • sour cream (skinny swap light sour cream)
  • cream cheese (skinny swap reduced-fat)
  • butter
  • salt
  • garlic powder

How to Make Mashed Potatoes

In a medium size stock pot, add the cauliflower florets, garlic, and chicken broth. Bring to a boil over medium-high heat. Boil for 10-12 minutes until cauliflower is soft and tender. Drain and return to pot.

Using an immersion blender or electric mixer, mash the cauliflower and garlic to desired level of smoothness and stir in the remaining ingredients.

Top with chives and serve warm.

Optional: Pop under a low-broiler oven until lightly browned for a crispy top.

Ingredients
 

  • 1 head of cauliflower trimmed and cut into florets
  • 4-5 cloves fresh garlic or jarred
  • 1 cup chicken broth Vegetable Broth or water also work
  • ¼ cup sour cream or reduced fat/light
  • 2- ounce cream cheese or reduced fat/light
  • 1 tbsp butter or light butter
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder

Instructions

  • In a medium size stock pot, add the cauliflower florets, garlic, and chicken broth. Bring to a boil over medium-high heat. Boil for 10-12 minutes until cauliflower is soft and tender. Drain and return to pot.
