Grandma’s French toast recipe just might take a backseat to these French toast sticks stuffed with pumpkin cream! Get excited to wake up in the morning with this guaranteed breakfast favorite. And you’ll feel good about having a nutritious morning meal with three sticks only being 220 calories!

I love making these as soon as the air gets crisp and fall starts settling into the area.  There is just something about a nice cup of coffee and a plate of scrumptious pumpkin spice French toast!

Can I freeze this easy french toast?

This is a great breakfast to make ahead and then freeze. It is easily reheated and tastes just as good the next day. I like to wait for it to cool, and then move it to a freezer bag.  Make sure you label and date the storage bag as shown below.  This makes it easy to know what you have frozen, and when it was made.

This recipe is good in the freezer for up to 4 months.  When ready to reheat, just pop onto a microwave-safe plate and cook in 30-second increments until heated through.  Usually, this takes 1 – 1 1/2 minutes.

How to serve healthy french toast?

When you make this healthy french toast, you want to serve it warm. Sprinkle it with powdered sugar and a small side of sugar-free syrup, real maple syrup to dip in. You can also use agave syrup or honey to dip the healthy french toast.

Variations of this recipe

If you are making the best french toast, you can change the recipe up to add new flavors. If you want to change this recipe up, you can try:

  • Add Chocolate Chips: You cand add mini chocolate chips to the inside of the french toast. The chips will melt slightly and taste amazing with the pumpkin.
  • Add Pumpkin Spice: If you want to make this have a bit more of a pumpkin pie flavor, add pumpkin spice to the pumpkin mixture. If you add the spice, do not add the cinnamon. Pumpkin pie spice has cinnamon in it already plus it has nutmeg and cloves.

Ingredients

  • sprouted bread (in the healthy freezer section)
  • 100% pumpkin puree
  • part-skim ricotta cheese
  • raw honey
  • egg
  • unsweetened almond milk
  • cinnamon
  • vanilla extract
  • powdered sugar

How to make french toast sticks

Preheat a griddle or a large skillet to medium low heat. Carefully the crust off the bread to make them even squares.

In a mixing bowl, stir together the pumpkin, ricotta, and honey. Spread the pumpkin mixture, evenly, over 5 slices of bread then add the tops on top to form sandwiches.

Slice the sandwiches into 3 sticks which will give you a total of 15.

In another bowl whisk together the egg and egg whites, almond milk, cinnamon, and vanilla.

Spray the skillet or griddle with nonstick spray. Dunk the sticks in the egg mixture and all the extra to drip back into the bowl. Working in batches, cook for 3-4 minutes on each side, or until golden brown.

As the sticks are done, sprinkle immediately with powdered sugar and serve warm

Ingredients
 

  • 10 slices of sprouted bread in healthy freezer section
  • ½ cup 100% pumpkin puree
  • ¼ cup part-skim ricotta cheese
  • 1 teaspoon raw honey
  • 1 egg
  • 2 egg whites
  • ¼ cup unsweetened almond milk
  • 1 teaspoon cinnamon
  • ½ teaspoon vanilla extract
  • 2 tablespoons powdered sugar or your favorite zero-calorie sweetener

Optional*:

  • sugar-free maple syrup

Instructions

  • Preheat a griddle or large skillet over medium-low heat.
  • Carefully cut the crust off of the bread to make even squares.
  • In a medium mixing bowl, stir together the pumpkin, ricotta, and honey.
  • Evenly spread the pumpkin mixture on 5 slices of bread, and top them with the other 5 slices, making sandwiches.
  • Slice each sandwich into 3 “sticks”, making a total of 15.
  • In another medium mixing bowl, whisk together the egg and egg whites, almond milk, cinnamon, and vanilla.
  • Spray the preheated griddle or skillet with nonstick cooking spray. Dunk the “sticks” in the egg mixture and allow the excess to drip off back into the bowl.
  • Working in batches, cook for 3-4 minutes on each side, or until golden brown.
  • When they are done, sprinkle immediately with optional powdered sugar and serve warm.
  • Freeze any leftovers in a resealable freezer bag. Microwave for 2-3 minutes to reheat.
