Quinoa is such a versatile ingredient, you can use it for pretty much anything, from salads to grain bowls to pancakes. Yep thats right you can use quinoa to make pancakes, like my recipe for Whole Wheat Banana Quinoa Pancakes! I mix quinoa right into the pancake batter along with mashed bananas and whole wheat flour. What are the Nutritional Benefits of Quinoa?

Quinoa has the highest fiber content of all grains. It is also high in protein and amino acids and is an easy way of integrating these essential elements into your diet. Quinoa can be eaten for breakfast, lunch, or dinner depending on how it is prepared. That’s a lot of benefits!

Quinoa is a grain that is extremely healthy, but not low in carbs. It may be difficult to work quinoa into a low carb or keto diet. Try another one of my keto recipes, like my Chicken, Red Pepper, and Broccoli Frittata.

Ingredients for Whole Wheat Banana Quinoa Pancakes

  • quinoa
  • skim milk
  • white whole wheat flour
  • brown sugar
  • liquid egg whites
  • bananas
  • vanilla
  • Stevia (or your favorite sweetener)
  • sugar free maple syrup

How to Make Whole Wheat Banana Quinoa Pancakes

Cook quinoa according to package directions. Allow it to cool slightly.

In a large bowl, combine quinoa, milk, wheat flour and brown sugar.

In a small bowl, mash bananas and stir in vanilla and Stevia.

Mashed Bananas

Add to quinoa mixture. In a medium-size bowl, beat egg whites on low speed until they are fluffy. This might take 2-3 minutes.

Whipped Egg Whites

Using a spatula, fold egg whites into quinoa mixture.

Spray a medium-size skillet with nonstick cooking spray and place over medium heat. Using a ⅓ measuring cup, pour batter into skillet. Flip each pancake after cooking for 3-4 minutes on each side or until batter starts to bubble.

Top 3 pancakes with 1 tablespoon syrup.

These healthy pancakes have cooked quinoa, mashed banana, and whole wheat flour. A delicious and lighter recipe than traditional pancakes.

Ingredients
