Ingredients
114-ounce can reduced-sodium black beans, drained and rinsed
2eggs
2tablespoonsunsweetened applesauce
1teaspoonvanilla extract
½cupunsweetened cocoa powder
¼cupsugar
½teaspoonbaking powder
½teaspoonbaking soda
¼teaspoonsalt
½cupsemisweet chocolate chipsdivided
Instructions
Preheat the oven to 350° F.
Spray a 9x9-inch baking dish with nonstick cooking spray and set aside.
Combine the black beans, eggs, applesauce, and vanilla in a food processor and process until smooth and there are no whole beans left.
In a large mixing bowl, whisk together the cocoa powder, sugar, baking powder, baking soda, and salt.
Add the smooth black bean mixture to the dry ingredients, and fold together with a rubber spatula until evenly combined.
Fold in ¼ cup of the chocolate chips, and spread the brownie batter into the prepared baking dish. Then sprinkle the remaining ¼ cup chocolate chips over the top of the poured brownie batter.
Bake for 15-18 minutes, or until a toothpick inserted in the center comes out clean and the edges of the brownies start to pull away from the baking dish.
Allow the brownies to cool in the baking dish on a wire cooling rack for 10 minutes before cutting them into 12 squares and serving.
